Date Roll

A lot of times when I speak about my grandmother I realize that I’m acting as though I only had one grandmother.  That’s because my father’s mother passed away before I was born.  But Granny Young did leave this legacy for us and this was one of my favorite candies at Christmas time.  I didn’t realize then that this was her recipe.  Now it is a joy to make and serve knowing she left this behind for us.

Ingredients
  • 3 c. sugar
  • 2 tbs light corn syrup
  • 1 tsp vanilla
  • 1 c. nuts
  • 1 c. milk
  • 1 tbs butter
  • ½ package chopped dates
  • cherries and one pinch baking soda – optional

Instructions
  1. Mix sugar, milk, syrup, butter and baking soda (omit if cherries not used) in pan.
  2. Let boil.
  3. Add dates and cook until mixture forms a soft ball in water.
  4. Remove from heat.
  5. Cool slightly.
  6. Add nuts and vanilla.
  7. Beat until mixture becomes creamy.
  8. Divide in half on waxed paper.
  9. Form into rolls wrapping in waxed paper as you go.
  10. Refrigerate.
  11. Slice and serve.
